Chickpea Pasta Salad Recipe

A Healthy & Delicious, Plant-Based Alternative to a typical pasta recipe

The Stereotype…

There are loads of recipes out there incorporating chickpea pasta. The stereotype from many is that it’s a flavorless, chalky, undesirable alternative. WAIT, before I lose you. Making this chickpea pasta salad recipe in a COLD, summer, “pasta-style” fashion is totally the way to go! 

I’ve made chickpea pasta the traditional way, served with red marinara sauce.
MOM TRUTH: Not a fan of it that way.

  • 1 box Banza chickpea pasta
  • 1/2 cup of Greek dressing
  • 2 peppers (1 green, 1 red)
  • 1 cup chopped carrots
  • Sliced black olives
  • 1 chopped cucumber 
  • 1-2 tomatoes as desired

The Creation

First, chop the peppers, tomatoes, cucumber and carrots. Drain a large can of sliced black olives. Set all veggies aside. 

Cook the chickpea pasta in a large pot of boiling water for 8-10 minutes. Drain & rinse in cold water to cool. Once the pasta is cooled and strained well, empty the pasta in a large bowl. Add 1/2 cup of Greek dressing and mix well. Add veggies, mix well. Refrigerate for at least 1 hour!

The Benefit…

As stated earlier, chickpea pasta is loaded with protein and fiber. It is truly a plant-based powerhouse! It contains less calories, less carbs, and NO gluten. I know there are stereotypes about gluten also. MOM TRUTH: I’ll be the first to admit, I used to judge those ‘gluten-free’ boasters. Do you want to know the best part? I literally knew NOTHING about gluten. 

I am no professional now; however, I do have a much better understanding about gluten and why some individuals truly acquire a gluten free lifestyle

This could be an entire blog in itself, but I’ll summarize my own individual perspective. For those with conditions, such as Crohns, a gluten-free diet is a lifestyle change that allows for these people to not suffer in pain on the daily from intestinal inflammation, etc. I’m sure they’ve had their fare share of chickpea pasta and can provide ME with some feedback! 

Personally, I enjoy some selective gluten-free options for various reasons. I try to learn more about gut-health and stomach sensitivities constantly. Although, I don’t want to create a gluten intolerance for myself or my children, I think gluten-free options can be great in moderation!
